Our bone-in ham this year is from OBoucher & fils in Québec. "To offer you a ham with an authentic taste, the meat is salted with care, then smoked for many days in a smoker fed with maple wood shavings for an old-fashioned smoking offering the much sought-after taste of a traditional ham. We use a tasty honey and mustard lacquer that we apply at the very end of the smoking for an even more remarkable taste."
